  • 1.5 oz Gin

  • 0.5 oz Dry Vermouth

  • 0.5 oz Fresh Lemon Juice

  • 1 Egg White

  • 0.5 oz Raspberry Syrup (or Blackberry Liqueur)

Don’t let its cotton-candy color fool you, this is one powerful drink. The herbal kick of gin is balanced with sweet raspberry syrup and fresh lemon juice; an egg white provides body and a foamy head (hehehe).

DETAILS

Named after the gentlemen’s club of bankers, lawyers and journalists who met in Philadelphia’s Bellevue-Stratford Hotel starting in the late 1800s, this was the drink that proved real men drink pink. And while visions of club chairs and captains of industry sipping blush-colored drinks might feel a little Yacht Rock, we like to think this sip of fun is more Lil Yachty. It’s classified as a “sour” but there’s nothing here to purse your lips about. Shake it up and serve in a martini glass garnished with fresh raspberries or a lemon twist.

INSTRUCTIONS

  1. SEPARATE an egg white into a cocktail shaker (no ice)

  2. ADD gin, vermouth, lemon juice and raspberry syrup to cocktail shaker

  3. SHAKE for 15-20 seconds

  4. ADD Ice and shake again for 15 seconds

  5. STRAIN into a chilled coupe glass

  6. GARNISH with 3 fresh raspberries on a cocktail skewer
