Cane.
Cane spirits originated in Portugal, the birthplace of the modern sugar industry. They are made from from sugar cane, unlike rum, which can also be made with molasses. Cane spirits typically are unaged and have their own distinctive style, depending on where it is made. Whether you know it as Agricole,
clarin, aguardiente or cachaça, their flavors run from earthy, grassy, herbal, vegetal to sweet and complex. A worthy category to explore through cocktails.
Similar to Cane spirits, Rum is distilled from sugarcane or sugarcane juice, but can also start with molasses. It is aged in barrels to impart additional flavor. Sweet in character, rum is produced in almost every sugar producing country. Highly versatile from cocktail making to sipping neat or on the rocks. Call it Pirate’s drink, Nelson’s blood, or Barbados water...we call it delicious.
CANE STYLES:
Cachaça
Traditionally pot-distilled in Brazil from fermented sugar cane. Single distillation. Pre-dates Rhum Agricole.
Rhum Agricole
Column distilled from fresh sugar cane juice. Herbal, earthy flavors with a sweet nose. Produced in French Caribbean islands like Haiti, Martinique and Guadeloupe. Higher proof than cachaça.

RUM STYLES:
White/Light/Sliver
Filtered after aging to remove any color. Generally sweet and great for cocktail making.
Gold
Lightly aged in Bourbon barrels. Amber colored with more flavor than light rum.
Dark
Typically made from molasses and aged in oak barrels. Flavors of caramel, spice and molasses.
Spiced
Gold rum with additional spices like cloves, cinnamon, and cardamom.
